My favorite fall fruit is the pear. When they come into season, I just can't get enough of them. Leave it to my mother to create the BEST pear pie I've ever tasted...and I guess, the ONLY pear pie I've ever tasted. Not only does this pie capture the flavors of the season, its aroma fills the room and creates a warm and inviting atmosphere. Many gatherings happened because mom said she was making pear pie! Enjoy a little slice of my childhood. Bon Apetite!!!

LAUREN'S FAVORITE HOLIDAY COOKIES
Andes Mint Cookies
Growing up mint chocolate chip ice cream was my favorite. Some people I know think it tastes like toothpaste, but I firmly belive it does not! Fast forward many years and I was at my husband's aunt's home for a Thanksgiving dessert exchange with my in-laws and she made some WONDERFUL mint chocolate cookies. It was the best substitue for ice cream when we lived in the cold mountains and it was 25 degrees out. I don't want ice cream then, no thank you!
While this isn't the original recipe my husband's aunt gave me (it may have gotten lost in a move) This recipe from Two Peas and Their Pod is the exact same and bring back all the memories.
Recipe from Two Peas and Their Pod
Ingredients
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup unsalted butter, at room temperature
3/4 cup light brown sugar, packed
3/4 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
36 Andes Chocolate Mints, unwrapped
Instructions
Preheat oven to 350 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set aside.
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugars on medium high speed until light and creamy, about 2 minutes.
Mix in the eggs and vanilla extract, scraping down the side of the bowl with a spatula, as necessary.
Add the dry ingredients and mix on low until just combined. Don’t over mix.
Scoop by the rounded tablespoon onto the prepared baking sheet, placing the dough balls about 2-inches apart.
Bake for 8 to 10 minutes or until the cookies are set around the edges but still soft in the center.
Remove the baking sheet from the oven and gently press an Andes mint into the center of each cookie. Let the cookies sit on the baking sheet for 5 minutes or until the mint is soft and melty. Take a butter knife and carefully spread the melted mint over the top of the cookie, leaving a little border. The mint will become the frosting for the cookie.
Transfer cookies to a cooling rack and cool completely so the chocolate mint frosting can set up.
Hey, thanks for sticking with us through this newsletter. We are so grateful for your support! If there's anything we've learned throughout 2024, hosting master classes, workshops, events, it's YOU WANT MORE SOUND BATHS!!! Who would have thought a small set of chakra crystal bowls from Amazon would turn into an almost full collection of sound bath instruments? We love that you receive so much from them.
Our Black Friday gift to you is a 20 minute pre-recorded sound bath titled "Calm in C," available through this link! It's completly free and made with love in every trial attempt (yes, it took a hot minute to figure out how to record the vibrations without blasting your ears off).
Please, gift yourself some time in taking care of your body, mind, and soul. Recalibrate your nervous system by listening to these deep vibrating frequencies. Come back to it as often as you need and want.
Here's to wrapping up 2024 with a nice pretty bow, and sending it off. Let's enter 2025 renewed, balanced, and ready to face whatever the year has in store for us.
And, that's a wrap!
